It Is Time For A Soup Recipe--Eating Healthy
Trying to eat healthy is always a goal of mine, but it can be tricky! Especially with children that need lots more calories and fat than I do! I have been doing lots of research on omega 3 fatty acids, the B vitamins...and others. I bought some flax seed powder (this is one of the highest forms of omega 3) to put in my yogurt once a day...plus I am trying to eats lots of veggies, fish, whole grains, and fruit! Vitamin supplements, for some reason, give me headaches...so I am trying to get the things I need from my diet! I found this soup recipe that sounded really good and we tried it last night. It was very yummy. I did not add salt to it, but it could use a little for taste. Other than that, it was delicious, filling, and healthy!
Spinach, Chicken, and Wild Rice Soup

Ingredients:

3 cups of water
1 14 oz can reduced sodium chicken broth
1 10-3/4 oz can *healthy request* condensed cream of chicken soup
2/3 cup uncooked wild rice, rinsed and drained
1/2 tsp dried thyme
1/4 tsp black pepper
3 cups chopped cooked chicken breast
2 cups shredded fresh spinach
About 15 baby carrots, sliced

Directions:

In a slow cooker, combine the water, broth, soup, broth, rice, carrots, thyme, and pepper. Cover and cook on high for about 3 hours, or low for about 6 hours. Stir in fresh spinach and chicken in last few minutes of cooking.

I am always looking for new soup recipes, and this sounds wonderful. I've just started using flax seed a little bit, too, and it's been an easy addition.

Hi Kim,

Thanks for the recipe. It sounds very good. My kids and I get some organic flax seed oil added to our yogurt almost every morning. I also add a little raw wheat germ, a little maple syrup, as we have plain yogurt. Then we add some fresh berries. It is so good, much better than it sounds! lol ;)

I am so curious about your adoption process. I know you update when you have new info. My hubby and I are prayerfully moving forward to adopt in India! Maybe China will be after that. ;)Thanks for your help and input a few months ago.
