Menu for This Week.
This week will be light and easy...my kind of week!
Monday--Tortilla Soup...all veggies for me...a teeny tiny amount of chicken for everybody else.
Tuesday--Whole Wheat pasta with Muir Glen organic tomato basil sauce, arugula and baby spinach salad, fresh multi grain loaf
Wednesday--Jason's Deli...salad bar for me.
Thursday--Black bean burritos, salsa and blue corn chips, small salads(with whatever I have)
Friday--Vegetable(broccoli, carrots, mushrooms,asparagus, zucchini,red onion) stir fry over brown rice....chesse pizza for the kids.


I am a stay at home mother to 4. I am very blessed to have a godly husband who loves the Lord and his family. I welcome the days of much needed grace,the times of sweet victories,and the tears of trials,knowing it is all for God's glory. I want my lifesong to sing to Him,the author and finisher of my faith. Soli Deo Gloria--To the Glory of God alone.

This looks like the kind of menu I could handle! I need to start 'light and easy' -- and start eating more healthily (is that a word?)
How did you fix salmon before you went vegan? Our neighbor went to Alaska to go salmon fishing and to thank us for caring for her dogs while she was gone she gave us four big salmon fillets (her outfitter did all the work filleting, freezing and shipping). I have no idea what to do with them!!!
Hey Kim! What kind of sauce do you use in your stir fry? Do you have a favorite recipe book you are using these days?
