Sweet Potato, Lentil, and Kale Soup
This is my new favorite fall *perfect soup*! When I first got the recipe, I wasn't sure about this combo of ingredients, but it works! Not only does it work, but it is delicious and super healthy, loaded with superfoods! Get ready for a lot of chopping, but it will be worth it.


Sweet Potato, Lentil, and Kale Soup

1 cup dry lentils...can use french green, red, or brown.
6 cups of organic vegetable broth(or cooking liquid of your choice)
1 onion, chopped
A few cloves of garlic, smashed and sliced
3 sweet potatoes, peeled and cut up into bite size pieces
1 bunch of kale, stripped off of stems and torn into pieces
1 splash of olive oil
1 TBSP of curry powder(or to taste)

Splash a small amount of olive oil into a large pot and saute onion for a few minutes. Then add garlic for just a few minutes...don't burn the garlic. Add everything else except the kale and bring to a boil. Simmer for 15 minutes. Add kale and simmer for 15 more minutes. Serve with crusty bread or brown rice. Enjoy!
