Recipes
I had quite a few of you ask about recipes! I usually post a recipe or two,or at least a link to a recipe. I'm sorry I didn't take that time to do that yesterday. I was in a hurry and never got around to coming back and adding it. I'll be glad to do that for you now.
Chris, This is the shrimp scampi recipe I like, although I have tried different ones--this one tastes the best to me.
My vegetable beef soup recipe is one I have just put together based on the likes of my family. Here is one that is close to what I make. My only difference is I use less tomato juice and some beef broth, too. Sometimes, I use V8 juice instead of tomato juice.

Comfort Chicken Noodle Casserole
1 Package meduim egg noodles,cooked and drained....I cook these in the chicken broth from the chicken.
2-3 Chicken breast,cooked in seasoned broth,shredded
1 soup ladle of the broth
2 cans cream of chicken soup (I always use the Healthy Request)
1 8 oz sour cream
salt,pepper,and dried parsley to taste
Combine all the ingredients above in a 9x13. Sprinkle parsley flakes on top. Cover and bake at 350 for about 30 minutes until hot.
This is an easy, economical, filling noodle dish that my family really likes. Enjoy!
