Monday Menu Plans--Recipe added


Last week was one of our busiest weeks ever! We were on the road a lot and had a lot of activities that all happen to fall on the same week...such as homeschooling standardized testing(3 days), AWANA games practice and the actual games (our team won state! Yea!), Orthodontist appointments, out of town speech class for oldest daughter, Youth retreat for oldest daughter...plus all of our regular scheduled things! I am tired tonight!

I'm ready for a nice week at home! I am happy to have my meal plans and having time make it all! Please go see Organizing Junkie for more menu ideas!

Here is mine:
Monday--Spicy egg casserole, hashbrowns, fresh fruit salad, lemon poppy seed muffins

Tuesday--Baked Tilapia filets with seasoned veggies, steamed rice

Wednesday--Sub sandwiches, apple wedges, grapes, strawberries

Thursday--Nacho chicken casserole(see recipe below), mexican corn, black beans

Friday--Eat out/pizza

Saturday--company coming over...probably baked cheesy chicken spaghetti, salad, french garlic bread


Nacho Chicken Casserole
6 boneless skinless chicken breasts
1 can chicken broth
1 can cream of chicken soup
1 can cream of mushroom soup(I always use Healthy Request on all canned soups)
1/2 can diced tomatoes and green chilies(Ro-Tel)
1/2 lb cheddar cheese grated
1 bag nacho cheese doritos

Preheat oven to 325 degrees. Cut chicken into thin strips. Heat in chicken broth for about 10 minutes over medium high heat. Remove chicken to cool. Reserve broth. Place a layer of chips in a 9x13 baking dish. Lay chicken on top of chips. Mix soups,rotel,and rest of chicken broth. Pour soup mixture over chicken and chips. Top with grated cheese. Bake for 35 minutes.

Kim,
I make that recipe too, it is great! Another way to make it is to put everything but the chips and cheese in the crockpot and then just serve it over doritos with shredded cheese on top.

My sister-in-law had a birthday and I bought her Girl Talk. Her daughter, my niece is ten. I thought it would be nice for them. You went on and on about it I had to buy it for her. She is very much looking forward to reading it and I am looking forward to hearing her thoughts.

Mmmmmm....all sounds good to me. The mexican corn caught my eye, I may have to try that next time we have mexican. I'm always trying to think of something different to go with those meals...get tired of beans, and the hubby doesn't like mex. rice. Maybe the corn could be an option! Glad I stopped by!
