Requested Recipes
I am always glad to share my recipes...but pre-warned, they are nothing fancy. I cook very simply and try to be very healthy. I had quite a few requests for recipes in my comments and in emails. I will gladly share those now!

My mom sent me this and I thought it was funny. Not typical of the things I usually post... : )
Chicken Tortilla Soup in the slow cooker
2-3 chicken breasts cooked and shredded
1 can mild rotel(or spicy if you like that)
1 can black beans
1 can pinto beans
1can stewed tomatoes
1 can corn
1 pkg mild taco seasoning
1-2 cups of organic chicken stock
I combine all the ingredients except the chicken and cook on low for half a day(5 hours or so), then I add the chicken for the last hour. Serve with baked tortilla chips and shredded cheddar cheese. This is a great soup to double the recipe and have company or leftovers. I do that a lot.
Fresh Cranberry Relish
1 bag fresh cranberries
small amount of sugar for taste(I use about 1/4 cup)
1/2 cup OJ...(fresh squeezed is best)
1 8oz can crushed pineapple
Optional: 1 16 oz package of frozen sliced strawberries(thawed)
Optional:1/4 cup chopped walnuts
Cook on medium heat the cranberries in OJ and sugar until the berries have popped. This is my favorite thing to do for Thanksgiving! This should make a nice thick consistency. Turn heat to low and add the pineapple and other optional ingredients. Remove from heat and chill for at least 2 hours. I serve it in a beautiful crystal bowl and it looks and taste so festive!
Sweet Potato Casserole
We LOVE sweet potatoes!
2 pounds sweet potatoes baked,cooled,scooped out
2 TBSP orange juice(I use more than this most of the time)
3/4 cup brown sugar
1/8 tsp ground nutmeg
2 TBSP butter
1 cup mini marshmallows
Preheat oven to 350. Combine the sweet potatoes, OJ, brown sugar, nutmeg, butter and whip with mixer until smooth and creamy. Place in baking dish. Bake for about 20 minutes on 350(until hot)...then pour mini marshmallows on top and bake on 400 until marshmallows are melted and light brown.

I am a stay at home mother to 4. I am very blessed to have a godly husband who loves the Lord and his family. I welcome the days of much needed grace,the times of sweet victories,and the tears of trials,knowing it is all for God's glory. I want my lifesong to sing to Him,the author and finisher of my faith. Soli Deo Gloria--To the Glory of God alone.

Thanks for the recipes. I will copy them to my recipe file and use them in the future as we will be on the road for the holiday and not cooking at all.

I think I'll try that soup. It sounds good. My family doesn't really like soup all that much, but it's worth a try....
as for the sweet potatoes...ugh. I'm just not a sweet potato kind of gal....

What is rotel, and in which section of the grocery store to I find it?
