Monday Menus


These are my menu plans for the week. You can visit Laura to read more ideas!

Monday--Slow cooker roast and carrots, whole kernel buttered corn

Tuesday--Pan seared seasoned chicken breasts, baked sweet potatoes,lemon green beans with walnuts, whole grain bread

Wednesday--Pei Wei

Thursday--Pan grilled salmon, vegetable stir fry(brocolli, carrots, mushrooms, sugar snap peas, yellow squash),and sprouted brown rice

Friday or Saturday-- Chili Stew (see recipe below)


Chili Stew

This is VERY easy and pretty healthy...and really good!

1 pound ground turkey
1 bell pepper, chopped
1 onion, chopped

Brown turkey with the bell pepper and onion...set aside

Combine these ingredients in a large soup pan:

2 cans Progresso vegetable minestrone soup(the 19 oz size)
2 cans Ranch style beans with the black label
1 can rotel
turkey, bell pepper, and onion
1-2 cups of low sodium beef broth(depending on how thick you want it)

Simmer until thoroughly hot.

Ok, I may sound sort of dumb here, but what kind of beans are "ranch style'? and should the rotel have the green chilies in it?

Thanks for sharing your recipe for the Chili Stew. I'm going to ask a silly question: what is rotel?

Ranch style beans are the brand name, I think...they are pinto beans with a western flavor.

Rotel is canned tomatoes and green chiles...I buy the chopped in the mild flavor.
