The Menu for this Week
Monday-Parmesan chicken with whole wheat linquine and tomato basil sauce, honey wheat loaf, garden salads(mixed baby greens, grape tomatoes, chopped broccoli with Rosemary and garlic vinaigrette)

Tuesday-Chili/meatless chili for me

Wednesday--Thanksgiving Service at our church, eat out on the way.

Thursday- Thanksgiving dinner at our house! Turkey, vegan dressing, sweet potatoes with marshmallows, broccoli and rice casserole(my kids favorite!),dinner theatre green beans(a tad of butter, brown sugar, toasted slivered almonds, and garlic powder),homemade cranberry sauce,whole wheat rolls, and pumpkin pie.

Friday-We decorate our house for Christmas the weekend after Thanksgiving, so we always eat leftovers on Friday and order pizza on Saturday.

Hi Kim,

I always enjoy reading your menu plans.:) I hope you and your family enjoy a wonderful Thanksgiving together.

Have you previously shared your green bean recipe? I tried to Google it and did not come up with anything. Also, is your broccoli-rice casserole from All recipes? There are so many recipes that use processed cheese, etc.I thought yours was probably a healthier alternative.

The broccoli and rice casserole is the really bad one...sorry! I make it twice a year for my kids. I need a healthier alternative, though. Let me know if you find one that is as tasty for kids!

For the green beans: Just drain 3-4 cans of whole green beans, melt about 2 Tbsp of real butter(you can use more, I just limit the amount) and mix with about 1/3 cup brown sugar. Stir in the almonds and bake covered at 350 for about 30 minutes. It is on my blog somewhere, but It is easier to just share it with you here.

Thank you, Kim! I will be on the lookout for another recipe and let you know if I find something. Twice a year isn't bad at all! I just have an aversion to processed cheese, my issue. ;)

That broccoli and rice casserole used to be a huge favorite of mine. I haven't made it in forever because there aren't many redeeming things about it. Kimberly, do share if you find a better version!

I found a recipe I am going to use. I will just make a couple modifications to it. The condensed soup I bought is from Health Valley, so no MSG or other icky stuff. Also, I will be using a combo of real cheddar and monterey jack cheese, shredded. I still will not think of it as "healthy", but hopefully it will taste good. :)

Hope this is helpful to anyone else who enjoys this side dish.
