What Is Being Served Today
Breakfast

Lunch

Dinner
Cinnamon Apple Oatmeal (for one-you can multiply the recipe for more servings)
1/2 cup oats (not instant)
1/4 apple chopped into small pieces
1/2 tsp salt
1 1/4 cup of water (or for more sweetness you could add 1/2 cup apple juice and 3/4 cup water)
Cook this for about 5 minutes...then pour into bowl, add about 1/2 tsp cinnamon and 1 tsp of sugar in the raw. Lightly stir and enjoy!
With the oatmeal we had a small fruit cup of fresh pineapple and blueberries.

Lunch
Garden Fresh veggie wrap
Whole wheat wraps or tortillas
Spicy red pepper hummus, spread over warm wrap
Chopped tomatoes
Shredded carrots
Chopped red onion
Sliced black olives
Baby Spinach
A tiny bit of feta cheese
Top with some sprouts
With this I will have some organic blue chips and salsa. My kids may have some cheese dip and chips. Also, my kids wraps may be different from mine or they can have a traditional sandwich.
Dinner
Minestrone Soup and Baked Potatoes
Minestrone Soup
4 cups of vegetable broth
1 chopped onion
1-2 chopped celery stalks
1 14.5 ounce Italian style stewed tomatoes(I like Muir Glen)
1/2 cup uncooked small pasta...I will be using whole wheat rotini...not really small, but it will work.
1 15 ounce can kidney beans, drained and rinsed...I like the Eden Organic
1 15 ounce can cannellini beans, rinsed and drained
1 16 ounce package frozen Italian style vegetables
2 tsp parsley flakes or some fresh parsley
1/2 tsp basil
1/2 tsp oregano
1/2 tsp marjoram
fresh ground pepper to taste
Place onion and celery in large pot with 1/4 cup of vegetable broth. Cook, stirring for 5 minutes. Add remaining ingredients. Bring to a boil, reduce heat, cover and simmer for 30 minutes.
We will be having large baked potatoes with this yummy soup.



I am a stay at home mother to 4. I am very blessed to have a godly husband who loves the Lord and his family. I welcome the days of much needed grace,the times of sweet victories,and the tears of trials,knowing it is all for God's glory. I want my lifesong to sing to Him,the author and finisher of my faith. Can I ask a question. You don't talk a lot about the adoption. Are you close to bringing her home. Is there anything we can be praying?
Oooh, thanks for sharing! Those are all things that I can serve without worrying about allergies.
Yummy! My kids love Irish Oatmeal. Have you ever tried that? We take turns adding lots of different things(not all at once:)...cinnamon, honey, nutmeg, raisins, walnuts. We also like to add tons of Dole Frozen Blueberries to a bowl of hot oatmeal. It cools it down enough to eat and sweetens it without sugar. Tasty! The fall is such a perfect time for this delicious dish! I always love when you share your recipes!

I had emailed you a while back. I think it was last week. Not sure if you received it or not. Anyway, I was asking about snacks and what kinds of snacks you give to your little ones.
