September Soup
With the evenings getting a lot cooler, it is soup time at our house! If you know me, you know I like to prepare and cook simple foods, because at this season of life, I have limited time to prepare meals. I enjoy cooking, but I don't always have the extra time to prepare a lot of foods that require hours in the kitchen. So, I like simple recipes, I have limited time, and healthy foods are a must...so here is a soup that fits all the above! It is similar to my Chicken Taco soup recipe, but it is vegan and it taste better!


Simple Taco Soup

2 cans of beans....I use one or two cans of black beans, one red beans
1 can of organic diced tomatoes
1 1/2 cups water
2 TBSP of taco seasoning (I use mild)...be careful and read the ingredients, some contain msg
1 chopped yellow onion
Chopped cilantro to taste....this makes it so yummy!

Simmer for 20 minutes

Serve with organic blue chips or tortilla strips.

Hi,

I just made this exact recipe last night! It felt a little like Fall here yesterday. I love to have little bowls of chopped avocado,yummy organic tortilla chips and some shredded cheese out too.

Mmmm, yummy!!!

Make your own taco seasoning and be assured it doesn't have MSG in it. :) This is the one we use -

INGREDIENTS
* 1 tablespoon chili powder
* 1/4 teaspoon garlic powder
* 1/4 teaspoon onion powder
* 1/4 teaspoon crushed red pepper flakes
* 1/4 teaspoon dried oregano
* 1/2 teaspoon paprika
* 1 1/2 teaspoons ground cumin
* 1 teaspoon sea salt
* 1 teaspoon black pepper

DIRECTIONS
In a small bowl, mix together chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt and pepper. Store in an airtight container.

Love soups like this on fall nights. I make my own taco seasoning too, and at least I know what's in it.
