Monday's Menu
Monday--Whole Wheat fettucine with lemon artichoke pesto(I bought this and am anxious to see how it taste!) topped with roasted asparagus...pan seared chicken for the rest of the family.

Tuesday--Chili with toppings...we may be getting some winter weather tomorrow...so this sounded good. Veggie chili for me. I just add a little bit of ground beef to this recipe to make my husband happy!

Wednesday--Probably Jason's Deli on the way to church.

Thursday--Taco salad for me/crispy beef tacos for everyone else. I have a wonderful vegan taco salad that I make...it is one of my favorite salads right now. See recipe below.

Friday--Chicken strips, cooked kale and mustard greens, baked beans, and cornbread


My Favorite Taco Salad

Baby Spinach
Torn Romaine
Chili beans with mild taco seasoning added(I buy organic chili beans and add a little bit of taco seasoning)
Some black beans and canned corn (optional)
Chopped Roma tomato
A scoop of Salsa
A scoop of all natural or homemade guacamole
A few sliced black olives
Low fat baked corn chips, crumbled on top...just a few.

I just layer these things in this order and it is so good! No dressing needed!


Did you know that increasing your green veggies, especially cruciferous ones, alone can greatly reduce your risks for heart disease and cancer? Cruciferous veggies include leafy greens like turnip greens and kale, broccoli, cauliflower, and cabbage. Even if you don't want to go all the way vegan...you can make your meat and dairy servings a lot less and increase your raw and cooked green veggies. Some easy ideas are to add baby spinach to your soups...make your salads, sandwiches, and wraps with romaine, watercress, arugula, or spinach instead of iceberg lettuce. Cut up some raw veggies, especially broccoli, and dip in an easy bean dip(refried beans(no fat),salsa, and cumin). I have found that I really like cooked greens. I didn't so much when I was younger...even though I was blessed with a fresh home grown garden that my parents tended to...now I would love that! I grew up eating turnip greens and ate them fine, but they were not my favorite...but now, I actually love them! I have always loved spinach, though. My mom says when she was pregnant with me she ate spinach almost everyday! Thanks, mom, for giving me a healthy start! (That must be why I like it so much! : ) I made a big pot of Kale last night...Kale and mustard greens are my favorite right now. I have been wanting to try swiss chard, but have not yet. So, as I prepare menus for my family and I, I am trying to cook more *green* and make 2009 a healthy year!

I grew up eating kale and turnip greens. Mom would boil them in a pot with rutabagas. I don't know how starchy vegetable fair on you list but I think rutabagas taste good with these greens. We would eat them with a splash of vinegar. Yumm,yumm, and good for you too =) BTW how's the new Garmin working?

I just bought a bunch of organic kale today.Do you mind me asking how you prepared yours last night? I was thinking of steaming or juicing mine.I'd love to hear other ideas too. Thanks!

I love my new Garmin! It has been so fun to use and easy too! I'm not a big gadgety person...but I do like this! I love that I can compare runs and see how my heart rate is doing. I set a heart alarm that lets me know when it gets to zone 5...it usually goes off at the top of that big hill I've mentioned before! It is just nice to see my exact distance, too. Do you have one?

I've been wanting to ask you...can I have access to your private blog? The kale we had last night was so good! I just boiled it in water with just a touch of olive oil and salt. Just perfect. I have also sauteed it and that is good, too...with a garlic and other seasonings.

No I don't have a Garmin, yet. I have been trying to decide between that and the Nike Sport. But they are so different its been hard to compare. I don't normally run with an ipod bc I usually use my run time to pray. I have tried recently listening to sermons and praise music, but I'm not sure I can convert=) Both ways seem profitable but I'm leaning toward the solitude and prayer, which would make the Garmin a better option. Do you find the Garmin to be a bit bulky on your wrist?

No, it is very comfortable! It feels like a watch and does not bother me when running at all....and I am don't like anything moving or getting in the way when I run. This works great! The heart monitor goes around the upper abdomen area...right below the bra...it stays put and I never even feel it. I have accidentally left it on for half a day after running because I forgot about it.

Mike watched the price on amazon and ordered it from there quite a bit less expensive than the Garmin website. You may want to check around for good prices.
