Menu For This Week
Monday--Chicken fajitas, bean burrito for me, Mexican rice, and black beans.
Tuesday--Baked Hawaiian chicken, broiled salmon for me, baked sweet potatoes, and steamed broccoli.
Wednesday--eat out...either Pei Wei or Panera Bread (love their Greek salad)
Thursday--Whole Wheat pasta with portabella mushroom marinara (maybe some other veggies thrown in as well), whole wheat french loaf, fresh garden salad with Ranch for the kids and balsamic vinaigrette for me.
Friday--Either Lentil Soup or veggie pizzas. I like to use the Whole Foods Market ready made whole wheat or multigrain crusts.
Saturday--Dinner plans up in the air since we have Abigail's state soccer tournament...probably eating out somewhere.


I am a stay at home mother to 4. I am very blessed to have a godly husband who loves the Lord and his family. I welcome the days of much needed grace,the times of sweet victories,and the tears of trials,knowing it is all for God's glory. I want my lifesong to sing to Him,the author and finisher of my faith. Soli Deo Gloria--To the Glory of God alone.

Hi Kim, I really enjoy reading about your meal plans because they include vegan items for you and other things for your family.:) That isn't always an easy thing to do.
Do you make your own Mexican rice or is there a ready made mix that you like? I love to serve that with burritos or enchiladas but haven't found a mix I like (at Whole Foods) and I don't think I have a good recipe for it either.
Glad your Mom is doing a little better. :)
