Monday Menus
Happy Monday!

I was not able to make the mahi mahi on Friday night from last week's menu because I had to be out of town taking 2 of my kids places....but I was able to pick up a salad *to go* from one of my favorite places of all times and eat it when I got home. The salad was so good. I would love to figure out how to make the dressing...it was yogurt cucumber dill. The salad has a mixture of spinach and romaine with chick peas, diced red onions, cucumbers with the peeling, mango, roasted chicken, and slivered almonds...and with that yummy dressing, it was divine! No complaints at all on missing the mahi mahi....we'll just have it this week!


Monday--Blackened mahi mahi, couscous, and roasted asparagus. Tonight will be JHs very first baseball practice ever...so dinner will be a tad rushed.

Tuesday--Citrus chicken with steamed broccoli...a large yummy superfoods salad for me!

Wednesday--Maybe Jason's Deli or Pei Wei

Thursday--Romaine salad with oranges, feta, and beans for me and a rotisserie chicken and baked sweet potatoes for the family. I will eat a sweet potato, too. Love those!

Friday--Women's conference for my 2 oldest and me. We will be eating out...not sure where yet.

I made a really yummy salad today for lunch. I found the recipe here, but I changed it up a bit to make it a little healthier and more colorful.

My version:

Organic leafy greens, the darker green the better!
Cut up cantaloupe and sliced strawberries
Feta cheese, just a little crumbled
Chopped walnuts
3 oz poached chicken

Dressing:
1/4 cup of 0% fage plain greek yogurt
2-3 TBSP raspberry vinegar
3 TBSP simply orange juice
2 tsp poppy seeds
salt and pepper

Whisk together and if it is too think, add some more OJ.

I LOVE cucumber ANYTHING! Found this recipe for a cucumber/yogurt/dill dressing that sounds yummy! Thought you might like to try it too.

Kim, did you blacken your fish or grill it? I don't have a lid for my cast iron pan. I am picking up fresh mahi this afternoon from our local fish market!

Well, I intended to blacken it, but I ended up pan searing for a few minutes on each side with the spices and then putting it in the oven (400) for about 15 minutes more. It was delish!

The mahi mahi looks delicious. We grilled some a couple weekends ago and made fish tacos and it was so good. The next morning our daughter came into the kitchen horrified and said "Do you know mahi mahi is actually DOLPHIN!"
