Fall is on the way...and SOUPS are on the Menu!
Those of you that know me and/or read my blog, know that I love soups and stews...and since fall is approaching it is the perfect time to think about preparing these yummy foods for my family. On the days where the air is crisp and cold, the leaves are turning, and darkness arrives earlier in the evening, there is nothing better than a warm bowl of goodness, a hunk of multigrain bread, and a relaxing evening with my family. I realize it is still a while before we have these kinds of evenings, but it is good to prepare ahead of time and find recipes that everyone will enjoy.
Some staple soups for us are tortilla soup, veggie chili, turkey chili, minestrone soup, lentil soup, white bean soup, and vegetable soup. I found some new soup recipes that I am going to try this fall. They are not really new ideas, but just healthier versions of some older ideas. They all sound so yummy!
Here is a recipe for a super healthy Broccoli Soup that is so simple. You can get multiple servings of cruciferous veggies with this soup:

Cream of Turkey and Wild Rice Soup
Tuscan Bean Soup
Chicken and Spinach Soup with Pesto
Black Bean Soup
Broccoli-Cheese Chowder
Lentil Soup
Here is a recipe for a super healthy Broccoli Soup that is so simple. You can get multiple servings of cruciferous veggies with this soup:
Superfood Soup
1-2 bags of frozen broccoli, cooked in some water until very tender.
Put broccoli and water in a blender in batches with about 1 TBSP Olive Oil.
Add salt and pepper to taste.
Blend until pureed. Put back in pot to heat through.
Top with cheese of choice or just leave plain.
Enjoy!

The broccoli soup recipe looks yummy and so easy! Thanks for sharing. I am soooo ready for soup. I've been waiting and tomorrow soup is on our menu! Finally!
