I hope everyone had a wonderful weekend. Ours was full of soccer games,church,and just fun outdoors. It was beautiful here!
Here is what we are having this week:
Monday-Homemade vegetable beef soup with cornbread
Tuesday-Chicken Parmesan with pasta (See recipe below....it is easy!) ,steamed veggies(brocolli,carrots and cauliflower) and cheese bread-we have a Reformation Celebration this night....so Wednesday and Tuesday nights may be switched.
Wednesday-Eat Out or Chicken Parmesan
Thursday-Depending on the weather...if it is cold that day,then Chili....if it is not then,mesquite grilled chicken,seasoned green beans,pasta salad....also a big chocolate cake for Mike's birthday!
Friday-We have a busy Friday of taking children places-Takeout Chinese
Saturday-Baked potatoes with toppings and fresh green salad.(salad dressing recipe see below!)

Sweet and Sour Salad Dressing(yummy)
This is good with romaine lettuce,grape tomatoes cut in half,and fresh grated parmesan cheese. Love it!
1/2 cup sugar
2 tsp sesame seeds
1TBSP poppy seeds
1/2tsp minced onion
1 tsp worchestire's sauce
1/4 tsp paprika
1/2 cup applesauce
1 TBSP oil
4 TBSP apple cider vinegar(you can add more of this to make it less thick)
Mix and chill.
Parmesan Chicken (non tomato version)
Dip chicken breast(boneless) in melted butter
Dip in bread crumb mixture(italian bread crumbs,italian seasonings(you can buy these already mixed up in the seasonings),fresh grated parmesan cheese,lots of garlic powder)
Bake at 325 for about 45 mintutes to an hour uncovered.
Serve over thin spaghetti in butter sauce. The butter sauce is just simply about a stick of butter(or less) with parsley and garlic salt....I don't know the amounts....I just sprinkle it in.

Posting your meal plans is a great way to encourage moms to get their families around the table. We sit down to dinner together every night. Planning, shopping, cooking, and cleaning are hard work! It is worth it to me. Thanks for sharing how you do this for your family. I'm always on the look-out for good meal ideas. I get tired of cooking the same old things.

It is hard work to get everyone together and organize everything, but I know it is important to do this.
Kim, I agree with Leslie's comment! Seeing what you're having inspires me to get out my cookbooks and make a plan. If I wait until dinnertime, we'll end up eating cereal:)
