Saturday's Soup: Chicken Tortilla Soup
Well,I guess it is officially soup season at our house! With the high in the 40's today...the chill is definitely in the air. And,what is better than a hot and spicy soup for dinner? We love soup and eat it often at our house, especially on the weekends in the winter. Today's soup is Chicken Tortilla Soup. I have lots of recipes for this, but this one is my favorite. And it is so easy!
1 pkg Uncle Ben's Ready Rice(spanish)--add this the last 5 minutes of cooking
1 can black beans
1 can chili beans(I use the one with the mild sauce undrained)
1 can stewed tomatoes
1 can Rotel(I use mild)
1 pkg taco seasoning
2 cans chicken broth
1/2 cup-1 cup frozen corn( I just estimate)
About 1 lb cooked chicken, shredded (or you can use less) or 2 large cans chicken
I mix and cook in crock pot on low for about 4 hours or simmer on stove top for about 30 minutes.
Another variation to this is instead of corn, add 1 bag frozen gumbo vegetables.
I serve this soup with Mission tortilla strips and shredded cheese on top.
I think I may post a soup recipe every Saturday,if I can.

I am a stay at home mother to 4. I am very blessed to have a godly husband who loves the Lord and his family. I welcome the days of much needed grace, the times of sweet victories, and the tears of trials, knowing it is all for God's glory. I want my lifesong to sing to Him,the author and finisher of my faith. Soli Deo Gloria--To the Glory of God alone.

We are soup fans around our house, so I look forward to trying this one.
Thank you for your kind words-you have been such an encouragement to me. I never thought I would "connect" to people while blogging. I am usually very much a face-to-face relationship person, not much of a phone talker. So my blogging experience has been surprising.
I know we are both waiting for our designs from Susie--I feel like a kid waiting for Christmas! Can't wait to see yours, too.
Have you heard from her? I have paid for mine through pay pal and she said she was working on an idea!!! I'm very excited to see mine and yours!
I was the same way about blogging, just thought it would be fun...but,I have learned so much from other people's examples and feel like I have new friends!
This sounds great! I am definitely going to try this. Thanks! I'm planning on making your baked potato soup tomorrow. :)

This sounds really good, and I don't think there's anything in it that my kids are allergic to. I may have to use a variation on the rice, but other than that I think we can all have it!
Dear Kim, thank you so much for your kind words on my blog :) I will visit your page often! It looks as if we have some very similar interests! Don't you just love Ted Tripps S.A.C.H.? Well, I am going to do some more looking around on your site! God Bless You :)-Heather
