Another Monday Menu
It has been a busy weekend! Saturday we had Awana quizzing at a church in our state. Our Abigail participated. This was her last year to do AWANA quizzing, since she will have to move up next year! She and her teammate won for their age division and Abigail and her teammate also tied for Quiz champion! Yeah,Abigail and Alyssa! We told her before it began,that we were so proud of how she has worked so hard at learning God's Word...and it did not matter if she quizzed out or won,what mattered is the effort she has put into preparing. The goal is for God to say,well done,good and faithful servant. But,you know,it is fun to be rewarded for all that hard work,so we were very happy for her! But...she lost her basketball game that day...you lose some,you win some,right? We try to encourage endurance through the wins and losses!



I'm hoping to be able to make all these things this week,but we do have some plans that may cause us to eat out. If we do,I'll bump something to next week. If you'd like to see more menu plans,go here!

Monday--Sloppy Joes,steak fries,baked beans

Tuesday--Baked ham,homemade macaroni and cheese,green beans,and rolls

Wednesday--Eat out on the way to church

Thursday--Mom's Barbeque Brisket,scalloped potatoes,glazed carrots,biscuits

Friday--Leftover brisket,baked sweet potatoes

Saturday--Esther's Famous Southwest Chicken(from our church's cookbook-recipe below),buttered corn,salad

Esther's Famous Southwest Chicken

2 cups cooked rice
1 1/2- 2 cups cooked chicken
1 medium onion,chopped
1 1/2 cup shredded cheddar cheese
chili powder
1 8oz sour cream
1 can cream of chicken soup
1 can rotel

In a 9x13 greased baking dish,layer as follows: rice,cut up chicken,onions,then sprinkle with chili powder. Then layer cream of chicken soup,sour cream,and cheddar cheese. Pour rotel over the top. Bake at 350 for 30-40 minutes. SUPER!!!


Mom's Barbeque Brisket--This is from my church cookbook,too...we have a lot of good cooks! : )

1 brisket (3-4 pounds)
Celery salt
unseasoned meat tenderizer
garlic salt
onion salt
1(3 oz) bottle of liquid smoke
1/2(5 oz) bottle of Worcestershire sauce
1/2(16 oz) favorite barbeque sauce

Sprinkle both sides of brisket with salts and tenderizer. Place in a baking dish and pour liquid smoke over the meat. Cover and marinate overnight in refrigerator. When ready to cook,pour Worcestershire sauce over the meat. Cover and bake at 250-300 for 5 hours. Remove from pan and pour barbeque sauce over the meat. Bake,uncovered,for one hour longer...turning over twice. To serve cut across the grain into very thin slices.

I have to say congrats to your daughter for all her hard work in her quizzing. I know, beyond a doubt, that the scripture I learned and memorized as a teen in Bible Quizzing has stayed with me through the years - it's engrained in my mind and I reach for it on many occasions. She will never reqret learning God's Word!

I've never been able to make a good brisket--maybe I will try your recipe! Great menu--our church has a fellowship meal on Wednesday nights and I rarely miss it--so convenient
