Monday Menu Plans

We had a beautiful weekend here! 70 degrees and sunny! One daughter had a soccer game on Saturday and we also had a picnic lunch at the park. We had a gorgeous Lord's Day today as well. Our pastor/teacher was sick after being at the Shepherd's conference at Grace Community Church...I don't know if he caught something there. Anyway,he could not preach today. We missed him!!! One of our other pastors preached who happens to be our music/worship pastor. It was excellent. We are in his class for equipping hour on Sunday's..so we love his teaching! So thorough and accurate. And...how many music pastors do you know who are able to preach??? If you think about the qualifications of an elder...one is that they are able to teach. He is a pastor first, then a music/worship pastor second. I love that!


After church, we had a wonderful lunch at Fazoli's and I had to take a few things back to a couple of stores (clothing). I ended up buying a few more things...for spring and warm weather! Yeah!!! I think Spring has sprung!

Monday--Party Chicken(or what I call Sunday chicken), steamed rice, dinner theatre green beans, Rhodes yeast rolls

Tuesday--Roast, potatoes, carrots (all roasted together) wheat rolls

Wednesday--Chicken strips, french fries, apple wedges, strawberries, grapes, and cantaloupe

Thursday--Taco night...with all the trimmings, black beans, taco rice

Friday--We are having some *new* and wonderful friends over tonight for dinner! We can't wait! Spaghetti (maybe with meatballs...depending on my time to prepare), BSF salad (see recipe below),fresh fruit in poppy seed dressing(strawberries, pineapple, cantaloupe, grapes, bananas), French bread, brownies and ice cream for dessert.

Saturday--I will probably do a pasta dish tonight because I have been wanting to try this new recipe. Spring Tortellini with Pesto from my church cookbook and cheese bread. See recipe below.

BSF Salad (in memory of Lib Wenger)

2 cups chopped celery
4 stalks green onion
2 cups mandarin oranges
2 kinds of lettuce (I'm using romaine and mixed field greens)
1/2 cup slivered almonds
2 Tbsp plus 2 tsp sugar

Cook together almonds and sugar in a non stick skillet over low heat until sugar melts and almonds are coated(this can take up to 30 minutes). Pour onto waxed paper and let cool. Break apart and put on top of layered salad. While almonds are cooling, layer celery, onions,oranges, and lettuce in a large bowl.

BSF dressing

2tsp salt
dash pepper
4 Tbsp sugar
4 Tbsp red wine vinegar
1/2 cup canola oil
2 Tbsp parsley (I use parsley flakes)
dash Tabasco sauce

Mix all dressing ingredients together. Shake well and chill. Pour over salad right before serving.

Spring Tortellini with Pesto
1 lb fresh asparagus
2 9 oz pkg cheese filled tortellini
1 7 oz jar of pesto sauce
1/4 tsp salt
1/4 cup pine nuts

Snap off and discard tough ends of asparagus. Cut into 2 inch pieces. Prepare cheese tortellini as directed on package. Add asparagus pieces to pasta water during the last 2 minutes of cooking. Drain. Toss together all ingredients; sprinkle with pine nuts and serve immediately.

Kim, anything with pesto is delicious as far as I'm concerned...I just love it! The salad looks great too...I appreciate you including the recipes for us.

Your menu looks delicious this week. Love pot roast! The green beans sound so good. I had forgotten that I used to fix green beans with almond slivers all the time--not sure why I stopped! Have a great week!

Me again, I forgot to answer your question about when spring arrives here. Well it should be the end of April but it will most likely be the end of May before all the snow melts....crazy I know!!!

Kim,
Your Monday meal plans always make me hungry...and wish I were more of a cook! I do in fact cook, but only simple and easy and only because it's cheaper and healthier (you have four kids--you know exactly of what I speak!).

We are so ready for spring as well! It's been in the 70's so we've had the windows open--love it!
