Our Saturday Soup
I made this soup tonight and it was just perfect and delicious! I must pass the recipe on to you. Not only does it taste so good, but it is very good for you and filling. You must try it!



Tomato Florentine Soup

1 medium onion,diced
2 Cloves of garlic, minced
1 TBSP extra virgin olive oil
2 (1 lb) cans of tomatoes...I actually used one can of Pastene Ground and Peeled tomatoes(28 oz can)
2 (1 lb) cans of tomato sauce...I used Dei Fratelli tomato sauce(It's delicious!)
2 tsp oregano
2tsp basil
2 tsp thyme
1 bay leaf
About 1 cup fat free milk
About 1 1/2 cup cheese tortellini (uncooked)
1 bunch of fresh spinach or 1 pkg frozen spinach (I used frozen and it was fine)
salt and pepper to taste
Serve with fresh parmesan cheese

Saute onion and garlic in large kettle in olive oil until tender. Add tomatoes,milk, and spices. Simmer about 15 minutes, then add the pasta and cook about 7-9 minutes longer until tender. Add spinach and simmer for just a few minutes. Yummo!
