Monday Menus
We are off to a great week so far after a very busy weekend! I have to admit that I am a little tired after the time change and being out a little later than normal...but God is good and His grace gives us what we need to get up and enjoy a new day! The weather has been gorgeous lately...sunny with temperatures in the high 70s! I am thankful for the change of seasons which once again remind me of God's perfect order and sovereignty. Isn't all of creation a testimony to God's goodness? And He chose to share it with us and has given us a great living hope in what is to come.
I've been working on our menus for the week ahead...lots of fresh veggies and yummy salads!

Monday--Italian seared chicken breasts for the meat eaters, roasted vegetables(see below for recipe), mixed green salad with tomatoes, cucumbers, and garbanzo beans...with a light red wine vinaigrette.
Tuesday--Homemade vegetables pizzas...whole wheat crusts with a tad of olive oil and portabella mushrooms, red and green peppers, roasted broccoli, and fresh spinach with a light amount of soy mozarella on top. Cheese pizzas for the little kids.
Wednesday--Jason's Deli
Thursday--Turkey Chili for the family and bean chili for me.
Friday--We have a soccer game this evening, so I am not sure...
Saturday--Fresh garden salads and baked potatoes.
Roasted Vegetables:
1/4 cup olive oil...it doesn't take much for a lot of vegetables...use it sparingly.
sprigs of fresh rosemary
fresh thyme
About 6 red potatoes, cut into large cubes with peelings left on
6-8 carrots, cut into large chunks
1 bunch of asparagus, with tough ends snapped off and cut into 2 inch pieces
1 red onion, sliced
1 red pepper, sliced
1 zuchinni, sliced
salt and pepper to taste
Preheat oven to 400 degrees. Toss all of vegetables in 1/4 cup olive oil, fresh rosemary, fresh thyme, salt, and pepper. Put carrots and potatoes on baking sheet and roast for about 20 minutes. These take a little longer to cook. Then add other vegetables for about 20 more minutes. Bake until tender and slightly brown on edges. If they get dry use some olive oil spray during cooking time.


I am a stay at home mother to 4. I am very blessed to have a godly husband who loves the Lord and his family. I welcome the days of much needed grace,the times of sweet victories,and the tears of trials,knowing it is all for God's glory. I want my lifesong to sing to Him,the author and finisher of my faith.
