Pizza Night!

I like to buy ready made organic pizza crusts(365 organic brand) at the Whole Foods Market and then fill them up with yummy things! Tonight I am going to make a Mediterranean Pizza. The recipe is on the back of the crusts.

1 365 Organic Everyday Value Pizza Crust
1 TBSP extra virgin olive oil
1 bunch of fresh basil
1 15 oz can of organic diced tomatoes, drained...I like Muir Glen
1 cup sliced baby bella mushrooms
1 container whole creamery fresh mozzarella...or low fat shredded mozzarella
kosher salt
freshly ground pepper

Preheat oven to 400. Lightly brush the pizza crust with olive oil. Spread tomatoes and mushrooms evenly on crust. Sprinkle with about a teaspoon of Kosher salt. Top with fresh mozzarella slices and basil(just before adding the basil, tear the leaves into bite size pieces to help release their flavor). Sprinkle with more salt and pepper to taste. Bake at 400 degrees for 10-12 minutes or until crust is golden brown.

The kids would prefer a cheese pizza...so we will make one of those, too. : )

We love using Olive Oil instead of tomato sauce, too. Homemade pizza is one of our favorite meals on the Green Egg. Looks yummy!

mmmm... our favorite is olive oil, lots of garlic, assorted garden tomatoes (red, yellow, orange), fresh basil & FRESH mozzarella...the kind in water, and fresh parmesan-romano blend. It's sooo good!
