Monday menu for the Week!


Monday- Crockpot Chicken Sante Fe,Tortilla chips,brownies and ice cream for dessert.

Tuesday- Spaghetti and meatballs,Caesar salad,Cole's garlic bread

Wednesday- Church night,eat out

Thursday- Baked chicken,mashed potatoes,garlic and basil green beans,buttered baked baby
carrots

Friday- Beef stroganoff(hamburger helper--cheap,easy and family loves it!),salad,rolls

Saturday- Shopping day with my 2 oldest daughters,we will be eating out. Daddy and 2 little
ones will have sandwiches and fruit.



I'm going to be voting early today. Don't forget to vote everybody!!!!

Crockpot Chicken Sante Fe (recipe added this afternoon)

This is my first time to make this,but I have heard from others it is really good. It smells good right now!

4 boneless chicken breasts

1 can of black beans,drained and rinsed

1 can of corn,drained and rinsed(I used frozen corn)

1 cup of thick and chunky salsa

4 oz of cream cheese

In Crockpot,place beans,corn and 1/2 cup of salsa....lay chicken breast on top. Pour rest of salsa on top of chicken. Cook on high for 2-3 hours until chicken is done. Take chicken out and cut into bite size pieces. Add cream cheese and chicken. Let cook on high until melted and creamy. Also,add shredded mild cheddar on top,allow to melt before serving. Serve over rice or tortilla chips.

I am so relieved to share company with someone whose family loves the HH Stroganoff! I have made homemade and had noses turned up but that love the one from the box! Your menu is an encouragement to me :)

Funny, my kids love HH Stroganoff too. It is nice to have on those busy days, since it is so fast to make.

I really appreciate you posting your menus. It is easy to get in a rut and keep making the same things.

Ok, I'm wanting a recipe for the crockpot chicken. I haven't even got my head together for this today so we will be flying by the seat of our pants. Makes it interesting. :v)

Sounds like a great week at your house, it all sounds yummy! I make crockpot chicken santa fe often, and have used various proportions of beans, corn and cream cheese and it always comes out good. Just don't be turned off by the color (when the salsa and cream cheese mix, it turns a pinkish tint!). We eat ours over fat-free tortilla chips. Hope you enjoy yours :)

We love the crockpot chicken santa fe also.....I usually never bother to cut the chicken into pieces and we have it over tortilla chips. A favorite here and easy for me to do on Sunday mornings to be ready when we get home from church.
HH was a staple in our house when the kids were little!
I hope there will be a huge voter turnout, thanks for the reminder.
