Monday Menu For This Week


Monday--Savory Baked chicken from *Cooking with Paula Deen*(see recipe below), light and fluffy rice pilaf, Lemon buttery broccoli, Honey Wheat baquette bread

Tuesday--Beef Stroganoff with egg noodles, green beans, salad, french bread

Wednesday--Chicken Salad on croissants, chips, and fruit

Thursday--Chicken Fajitas, black beans, tortilla chips and salsa

Friday--Shrimp Scampi (I did not have this last Friday night,so I will try again), Angel hair pasta, salad, garlic toast

Saturday--Pizza or homemade soup

Savory Baked Chicken (from *Cooking with Paula Deen* March/April) I hope it is good!

1/2 cup olive oil
1/2 cup butter melted
3 TBSP fresh lemon juice
1TBSP dried oregano
1 Tsp garlic salt
1 Tsp dried crushed rosemary
1 Tsp ground black pepper
10 split chicken breast (I am using 4 breasts and 4 legs)

In a large resealable bag, combine olive oil and next 6 ingredients, mix well, add chicken. Seal bag and chill for one hour.

Preheat oven to 375. Remove chicken from marinade. Place chicken skin side up,on a large rimmed baking sheet. Bake 45-55 minutes,or until done.


Lemon Buttery Broccoli

3 TBSP fresh lemon juice
6 TBSP butter
4 cups of fresh broccoli florets

Heat lemon juice in a skillet until reduced by half(about 2 minutues) Whisk in butter until combined. Set aside.

Steam broccoli until crisp tender.(about 4 minutes) Drizzle with lemon butter. Serve immediately.

Kim:
I prepare Paula's recipes quite often and have a tip to share. For the chicken you won't need 1/2 cup of olive oil. Simply put the chicken in the bag and drizzle enough oil to just coat. Mix the other ingredients (I'd cut the oregano to 1 tsp) and mix well in the bag. I'd also cut the butter to maybe half a stick or less.
