Monday Menu Plans
I am going to be posting breakfast, lunch, and dinner menus this week. I just like the organizational aspect of having it all decided on for the week. I have my groceries bought, so I am ready for this week's plans! My husband said to me that no one cares what we are having for breakfast and if they do, they need to find something else to do with their time. I thought that was funny! I think it is fun to read other's menus and get ideas for new and good things to serve my family. But, I understand if you think like my husband...maybe you will read anyway.Have a great week!
Monday- Breakfast- apple bagels and fat free cream cheese.
Lunch- Chicken pot pie
Dinner- Crock pot chicken taco and all the trimmings, black beans
Tuesday- Breakfast- Cinnamon Rolls
Lunch- Chicken nuggets, mashed potatoes, salad
Dinner- Beef tips and rice, green beans, corn
Wednesday- Breakfast- Scrambled eggs, whole wheat English muffins and jam
Lunch- Chicken pasta
Dinner- Roast beef sandwiches and fruit
Thursday- Breakfast- Oatmeal and fruit
Lunch- Grilled Chicken Caesar Salad
Dinner- Honey Glazed Baked chicken, baked sweet potatoes
Friday- Breakfast- Cereal day
Lunch- Grilled Cheese sandwiches, chips, and tomato soup
Dinner- Stir fry fresh veggies in olive oil and garlic served
with brown rice, French bread
I am still on my healthy eating kick. Honestly, I have had so much more energy and feel so much better. So, for the meals above that are not low in fat, I will be eating various salads, fruits and veggies.
Here are the recipes for some of the salads I have been enjoying:
Low Fat Taco Salad
A mixture of salad greens...I like the 5 lettuce salad greens in a bag
1 can of ranch style beans tossed into salad
1 tomato chopped
Mild Cheddar shredded cheese (a handful)
Tyson southwest grilled chicken (2-3 ounces per serving)
A couple of tablespoons Lite Ranch dressing with some salsa added, mixed
Sliced black olives (I just add a little)
A handful of Baked Tostitoes crunched up
Spinach and Strawberry Salad
Fresh baby spinach
Sliced strawberries
Small chunks avocado
Toasted slivered almonds
Poppy Seed dressing
Healthy Chef Salad
Lots of Romaine lettuce and baby spinach
Smoked turkey, rolled up and chopped
Grape tomatoes, halved
Green onion
Shredded mild cheddar cheese
1 TBSP bacon bits
Fat Free Ranch dressing
And before you begin thinking I am cooking all day...I use really easy and some store bought things for our lunches. I have to use some short cuts to get it all done! I do enjoy serving my family with delicious(sometimes delicious) healthy foods, though. It is a joy!


I am a stay at home mother to 4. I am very blessed to have a godly husband who loves the Lord and his family. I welcome the days of much needed grace,the times of sweet victories,and the tears of trials,knowing it is all for God's glory. I want my lifesong to sing to Him,the author and finisher of my faith. Soli Deo Gloria--To the Glory of God alone.

Tell Mike that I for one care what you are having for breakfast because it helps me with fresh ideas. We are not having very many home cooked meals for the next couple of weeks due to moving. I conveniently packed up all of my pots and pans :-). Molly and I are going to be in town in a couple of weeks for Lynsey's graduation. Have a great week.

Thank you so much for this post. I was just telling a friend how I would love to do a "common" recipe swap to get some new ideas about what to cook each week (that my 3 kids would eat). Thanks for some ideas. It looks yummy.
Thank you for sharing your recipes, Kim. I made your strawberry delight dessert last night and it was so yummy! I substituted the canned strawberries from the filling with real ones but other than that I stuck to the recipe as it was. My husband was so pleased :)
