Monday Menus


This weekend was nice! It was a little laid back without a lot of pressing things we had to do. We got our back patio and pool area somewhat cleaned up, although we still have some work to do. Mike and I went to Lowe's to look for a few things. We ended up with 2 really cute out door rugs that match our patio furniture that is on our covered patio...the rugs are red, gold, brown, and green stripe. I could not believe how well they matched the fabric on the furniture!

We have begun our construction project...workers were in the house all last week to begin to get things going! We had the main contractors, the plumbers, and the electricians...lots of folks going in and out. I have been really dreading it, but the Lord has been so good to ease my mind and allow myself to be okay with people in my house! We love the contractor we have hired...he is a believer and we know their sweet family. They are pregnant with their 6th child!!! Isn't that wonderful? Our bonus room upstairs is being made into a bedroom and bathroom for our oldest. They are putting in a large dormer with a window seat, book shelves,a bathroom,and a huge
walk in closet. We are excited about the extra bedroom! This process is one step closer to adding Lydia to our family! After Gracie's room is finished, we will be painting all of the children's bedrooms, moving everyone around, painting one bathroom down stairs, and have new window treatments made for the children's bedrooms. I get a little overwhelmed at times, knowing what all I have to do...but I know it will be great when it is all done! This week should be more of the actual construction...sawing, bringing in materials, hammering...it should be interesting...at least it is upstairs and we are all downstairs doing school and everything.

Another huge thing going on around here is my parent's move! They have recently sold their house and are moving into a cute brand new home in a subdivision nearer to us. The house is great...smaller than their other one, less yard, and just perfect for them. The movers are moving them tomorrow! My sweet brother and his wife are here to help and oversee the move and we will be going over in the evenings and some during the day to help out. My parents NEED this house and we are so happy for them! Just pray all goes well! Moving can be hard on older folks and leaving your home of 19 years can be sad! I'm cooking a big meal for them for tomorrow night- hopefully, that will give them one less thing to have to think about.

Monday
Breakfast--Breakfast burritos...eggs, sausage, and cheese in flour tortillas
Lunch--Chicken pot pie express pockets, pudding for dessert
Dinner--For my parents, brother and sister in law--Spring Pesto Tortellini with asparagus( my brother is a vegetarian), baked chicken, fruit salad in poppy seed dressing, Dinner theatre green beans, veg-all casserole, and rolls

Tuesday
Breakfast--Eggs over easy, toast, OJ
Lunch--Baked Tilapia, peas and carrots, mashed potatoes
Dinner--Baked Pork Chops, corn on the cob, green beans, left over fruit salad

Wednesday
Breakfast--French Toast sticks, syrup
Lunch--Macaroni and cheese, yogurt and fresh fruit parfaits
Dinner--Lasagna, cheese bread or eat out

Thursday
Breakfast--Cereal, cinnamon toast
Lunch--Pick up lunch after piano...probably salads
Dinner--Beef Tacos, black beans, mexican rice

Friday
Breakfast--Sausage, egg, cheese croissants
Lunch--Turkey and cheese sandwiches, chips, apple wedges
Dinner--Chicken and veggie stir fry or Pizza/salad

Can't wait for more of your homeschooling "series". I kept checking and rechecking your blog this weekend in anticipation of a possible part three. :)

How wonderful that your parents will be moving so much closer! What a blessing that will be for you both!

I love that your parents are moving closer. I am so sentimental, so I can completely find the twinge of sadness with leaving their old home.

I would love for you to post pic's of the project. I love *before* and *afters*! Dealing with contractors can be grueling. Prayers for a completely smooth project :)

Can you believe it's time for swimming??? Summer is right around the corner. We are so ready!!

Kim -
You menu's inspire me to do more. If I posted my breakfast and lunch menu's they'd consist of
breakfast -cereal/poptarts (these are what my children ask for everyday and hubby eats cereal EVERY day)
Lunch - pbj sandwiches and what we like to call pizza rollup's.

You are so good to cook lunch! WOW - I am impressed!
I do plan my suppers out though and think I will join in the fun of posting it this week!
You've inspired me!

Wow, Kim, everytime I come over reading your blog, I'd love to invite me over for each lunch and dinner the whole week.
How do you manage to cook almost twice a day and what do you do with leftovers? (And if there aren't - how do you do that one?)

It sounds like you will be pretty busy with your renos. Would love to see before and after pics!

How wonderful your parents are moving closer to you. Mine just moved clear across the country from me and I miss them terribly.
