Superfoods RX Salad

DR. Pratt, who wrote the Superfoods RX book says he eats this salad once or twice a day. I don't know if I would go that far, but it is really good and easy to prepare. I usually make a double size and just add the chopped tomato and dressing right before serving. It will last me a couple of days for lunch or as a side salad. It is so fresh and colorful, which I love! Foods that are pretty are so much fun to eat!


1 cup spinach, torn in bite-size pieces

1 cup chopped romaine

1/4 cup shredded red cabbage

1/2 cup sliced red bell pepper

1/2 tomato, chopped

1/4 cup chickpeas(garbanzo),drained and rinsed

1/2 cup grated carrot

1/4 avocado, cubed

2 tbsp. extra virgin olive oil

1 tsp. balsamic vinegar

Combine all ingredients except olive oil and vinegar in a bowl. In a separate bowl, whisk oil and vinegar. Toss with dressing just before serving. Serves 1.

Some really good extras: A couple of TBSP of raw sunflower seeds, some chopped broccoli, some chopped or thinly sliced red onion, or a few kalamata olives.
