Monday Menus


I have been working on this week's menu. It could change....I have a sick little one and may not be able to get everything done that I need to. We'll see how the week goes....Don't forget to stop by organizing junkie's blog for more menu ideas!

Monday-Baked potato soup and french bread

Tuesday-Poppy Seed Chicken,rice,brocolli in butter ...I use this recipe with more poppy seeds in the chicken mixture and I use one sleeve of Ritz crackers with butter and poppy seeds for the topping.

Wednesday-eating out-church

Thursday-Beef and cheese enchiladas,black beans,spanish confetti rice

Friday-Baked ziti pasta,green salad,garlic french bread....or my husband mentioned eating out tonight if we have to take one daughter to a birthday party,so this may go to next week.

Baked Ziti pasta dish:

1 package of ziti pasta,cooked and rinsed

1can cream of mushroom soup

1 can tomato soup

1 lb hamburger meat or more if wanted to make bigger recipe,browned and drained

Garlic powder to taste

2 cups shredded mozarella cheese....also a sprinkle of parsley(fresh or dried) looks nice on top of the melted cheese.

This is so simple...but good and hearty. Just mix the soups together with garlic powder and hamburger meat,gently toss with pasta. Smother with shredded mozarella cheese. Baked covered in 9X13 for about 30 mintues at 350. Serve all bubbly and hot!

I have a similiar recipe for baked potato soup from Taste of Home. It doesn't ask for sour cream. My family loves the recipe and I am making it tonight and I just may have to try the sour cream.

You have inspired me. I am going to try to post my menu every Monday as well. I think this is such a great idea to encourage others to get around the table and it will help keep me organized too, I think.

The menu is a huge help to jumpstart the week of planning. My middle child is gone at dinner time three different nights so it is a challenge to keep dinner a priority. Thanks for the encouragement!
