Monday Menus

I'm finally having time to get my menu up. We had a birthday party this morning and I did a little shopping today, so I am just getting home.

Monday--Pesto and asiago stuffed chicken breasts, roasted asparagus and potatoes, and whole wheat rolls. Roasted asparagus is one of my favorite vegetables! It is so delicious! I added a video below that shows how to make it. The woman is not me, of course, but I make mine the same way...simple and delicious!

Tuesday--Crab cakes, seasoned green beans, spinach salad with strawberries and slivered almonds with poppy seed dressing.

Wednesday--eat out

Thursday--Whole wheat pasta, Tomato basil meat sauce, breadsticks.

Friday--Broiled salmon, steamed vegetable trio...this may be Friday night or Saturday night...depending on what we are doing...

Saturday--Chicken tacos with trimmings, black beans, chocolate pudding with cool whip for dessert.

This is how I love our asparagus except with some garlic added. Isn't it wonderful!? The kids enjoy it better if I put fresh parmesan cheese on top, but it is so not necessary because it tastes so good! Have a blessed week! I would love to see pictures from father/daughter sometime. I am having some computer problems, so I can't get my posted yet. Hopefully, soon.

Had to tell you I was visiting with a friend last night and she was lamenting about what to fix for supper. She mentioned she had asparagus but she doesn't like it. I gave her this recipe. She RAVED about it today. She, her husband, father-in-law and kids couldn't get enough!
