Monday Menu


This is what we will be having this week. You can read other's menus at Laura's Organizing Junkie.

Monday--Pesto cheesy chicken, steamed broccoli, focaccia bread, cantaloupe, strawberries, and blueberries with organic vanilla yogurt for dessert

Tuesday--Manicotti Florentine, roasted asparagus, focaccia bread

Wednesday--visiting the detention center tonight...something quick like a salad or chicken salad sandwiches.

Thursday--Broiled tilapia with lemon and garlic, steamed herb new potatoes in dressing, spinach salad with strawberries, slivered almonds, and raspberry vinaigrette

Friday--Either eat out or this soup that I have been wanting to try out.

Saturday--Herb Baked crusted cod, seasoned vegetables, basmati rice

I LOVE your healty menu's! ANd I am going to have to try the cheesy pesto chicken!
I have been trying to get more healthy and was trying to do all organic but with the price of food rising and (every thing else's price rising) we just can't afford it.
I hate that but such are the times I guess.

I know what you mean...I really want to buy all organic, esp dairy, meats, eggs...but my husband has said it is too high on some things....like 4 sticks of organic butter was $6.45...too much for us! We go through a lot of food pretty quickly with our size family! I do try to buy organic eggs and some milk and all of our yogurt and other dairy products are organic...also, I buy organic meats when possible...it is expensive, though!

Have you read Passionate Homemaking blog on my recommended reading list...she writes a lot about healthy living on a budget. It may give you some ideas.
